prawn stir fry with mango and basilrating:
1tbsp sunflower oil
2 tbsp chopped fresh ginger
2 cloves garlic, chopped
3/4 tsp.hot red pepper flakes
1 lb prawns, peeled and deveined
1 red pepper, diced
1 green pepper, diced
1 mango, peeled and diced
1 tbsp organic soy sauce
1 tsp toasted sesame oil
3 spring onions, chopped
juice of half a lemon
a handful of fresh basil leaves, shredded
Heat the oil in a wok over medium heat. the fry the ginger, garlic, and red pepper flakes. Cook and stir for one minute.
Raise the heat to high. Add red and green peppers, and chopped spring onionsstir-fry for 3 to 4 minutes, then add the prawns, sesame oil, soy sauce and lemon juice and cook for another couple of minutes. Add the mango and cook for another inute or so.
Remove from heat, and add the basil leaves. Serve with noodles (we stirred ours into the wok too).
