beef stir fry

The only reason I'm posting this is to remind me next time I'm wondering what to do with beef, as we've just put half an admittedly small cow in our freezer from that nice Mr Rawlings.  It was gorgeous.  We used half a small fillet of beef, and the rest is going into Beef Stroganoff tonight.

as always, quantities to suit

some good beef, sliced thin - we used fillet
3 spring onions chopped small
garlic and ginger, minced
lemongrass, ditto
one large chilli
half a courgette, sliced into matchsticks
juice of a lime
groundnut oil
a handful of basil leaves
some french beans, simmered for 4-5 minutes, and drained

Heat some groundnut oil in a wok, and ook the beef first, in batches - we kept ours fairly rare, but your mileage may very.  Remove it to a bowl.  Then add  garlic, ginger, lemongrass, spring onions, chilli, courgette, french beans and fry. Add lime juice.

Put a pan of boiling water on, with a small sloosh of sesame oil, and cook some chinese noodles.  Drain these.

Return beef to wok, and stir briefly until it's warmed through, then add noodles, and torn basil.  Stir together, dump into two bowls, scoff.  Lovely.
