prawns and basil with pasta
rating:we were very tired last night, and not very hungry as we had lunched out after a long and intensive meeting with a prospective client. So I opened the fridge, and surveyed the contents, and this is what I came up with.
I often think that these "scratch" meals are the best of all.
slice one courgette into matchsticks. Ditto the remains of a bunch of spring onions, and a rather elderly red pepper.
put some pasta on to cook - we had some fairly spiffy long curly spaghetti; rather as though someone had taken fusilli and stretched it.
the sauce will take about 6-7 minutes to cook, but there's some prep time of course.
heat some olive oil in a frying pan, and slice one courgette into matchsticks. Ditto the remains of a bunch of spring onions, and a rather elderly red pepper. Dump these into the pan and stir them about a bit. Then add prawns, the juice of a lemon, and a lot of black pepper. Just before serving, stir in some fresh basil.
it was lovely - light and simple and quick. Recommended.
