use strawberries or raspberries if you prefer. Or any other soft fruit, I should think.
500g/1lb2oz mascarpone cheese
1½ lemons, juice and zest
120ml/4 fl oz double cream
6 tbsp icing sugar
sprigs of fresh mint
langue du chat biscuits or wafers
place mascarpone, blackberries, lemon juice and zest, double cream and icing sugar in a blender and puree until smooth.
spoon into serving dishes and chill for a few hours before serving.
garnish with a few berries on the top and a sprig of mint and a dusting of icing sugar and serve with the biscuits or wafers.
