chocolate beetroot muffinsrating:
I'm not a great fan of beetroot (this is an understatement), but I know it does work well with chocolate in a cake, so I give you (courtesy of Maureen Kincaid Speller) these muffins:
200g self-raising flour
75g cocoa powder
225g caster sugar
200 ml oil
250g cooked, pureed beetroot
Set oven to 190°C
Sift flour/cocoa powder into bowl, add sugar. Mix well.
In separate bowl, whisk eggs into oil. Add beetroot, stir well.
Add wet ingredients to dry ingredients, mix together lightly.
Spoon into twelve muffin cases and bake for 20-25 minutes until brown and risen.
