Blueberry muffins with cream cheese frosting

  • 1¼ dl sugar
  • ½ tsp salt
  • 3 tsp baking powder
  • 1 egg
  • 2½ dl milk (I used cream & "gräddfil" (sort of like creme fraiche))
  • 125 g unsalted butter, melted
  • 150-180 g blueberries (+ some for decoration if you want) + ¼ dl flour

    Heat the oven to 175°C. Mix the berries with the ¼ dl of flour and set aside. Mix all dry ingredients in a large bowl and set aside. Whisk together the egg, milk and butter. Pour the mixture in the bowl with the dry ingredients and mix well. Add the berries and mix carefully. Fill the muffin cups almost to the top and bake for about 25 - 30 mins. (A bit shorter if you're using smaller cups.)
Cream cheese frosting
  • 115 g unsalted butter
  • 170 g cream cheese
  • 1-2 tbsp vanilla sugar
  • 440 g powdered sugar

    Beat the butter, cheese and vanilla sugar until smooth. Add the powdered sugar and mix thoroughly. Spread on the cooled muffins in any way you like and decorate with blueberries.
