zucchini brownie
rating: This is a fabulous recipe to use up your summer harvest of zucchini! I would say that this is more of a cake texture than a brownie texture, but VERY delicious! Enjoy!
Ingredients:
2 cups flour
1 1/2 cups sugar
1 tsp salt
1/2 cup cocoa
1.5 tsp baking soda
2 eggs
1/2 cup nuts (I used chocolate chips)
2 tsp vanilla
2 cups grated zucchini
1/2 cup vegetable oil
Instructions:
Combine all wet ingredients in a bowl. Combine all dry ingredients in a bowl. Make a well in the centre of the dry ingredients, and add the wet ingredients. Stir until well blended. Turn into a 9x13 baker, and bake at 350 for 30-35 minutes.
