knicky knocky baked beansrating:
preheat oven to 170˚C / 325˚F / gas mark 3
450g dried haricot beans
6 slices bacon or salt pork, about 225g, cut in pieces
1/2 large onion, chopped
1/2 tsp dry mustard
100ml maple syrup
64ml dark rum
640ml bean cooking liquor
2 tbsp brown sugar
put beans and water into pan, cover, bring to boil, simmer gently for 2 mins. Remove from heat, allow to stand for 1 hour. Return to the boil, simmer gently, covered, for 40 mns. Drain, reserving cooking liquor.
place bacon or salt pork in an ovenproof dish. Add beans, onion, mustard, maple syrup, rum and 425 ml of bean liquor. Bake in the oven for 2.5 hours uncovered, to allow a crust to form, then add remaining liquor and bake for further 30 mins. Cream together the brown sugar and butter, and dot on top. Serve with ham, or green salad - or both!
