asian coleslaw

From a Riverford leaflet - serves 6

1/2 cabbage
3 carrots
2 apples
1 red pepper
4/5 mushrooms
1 tomato
2 tbsp roasted peanuts
1 clove garlic, crushed
1/2 onion, finely sliced
1 chilli, chopped
3 tsp fish sauce
1 1/2 tbsp brown sugar
3 tbsp lemon juice
dash of sweet chilli sauce

Finely shred the cabbage, grate apples and carrot, slice peppers and mushrooms, chop the tomato.  Crush the roasted peanuts.

Finely chop onion and chilli, add to big bowl with fish sauce, crushed garlic, brown sugar, lemon juice and sweet chilli sauce.

Add raw ingredients and toss until all evenly coated.  Sprinkle with more peanuts before serving.
