peanut and kohl rabi stir fry

2tbsp sunflower oil
2cm fresh ginger, grated
2 garlic cloves, crushed
1 chilli, chopped
1 kojl rabi
1 carrot
250g thin egg noodles
1 bunch spring onions, chopped
150g french beans or sugar snap peas
3 tbsp hoisin sauce
2 tbsp soy sauce
2 tbsp water
1 tsp peanut butter
2 tbsp peanuts, toasted and crushed
Peel and chop the carrot and kohl rabi into thin sticks. Heat the oil in a work, and add ginger, garlic, carrot, kohl rabi and chilli. Stir fr for 4 minutes.
Transfer to a dish. Cook the noodles according to instructions, and add to the wok along with spring onions and peas/beans, and stir fry for another 2 minutes. Put the rest back in the wok, stir together till warm, serve.
