rating:As I am allergic to dairy products, we needed to come up with a sauce to cover those dry everyday meals.
So this is what transpired.
1 small onion
2 tablespoons grated or chopped ginger
1 small de-seeded chillie (optional)
2 teaspoons of tomato paste
1 teaspoon of light soya sauce
1 teaspoon of worcester sauce
1 dessertspoon of lemon juice
2 teaspoons of fish sauce or a good pinch of salt
1 teaspoon of dried thyme or a handful of rough chopped fresh thyme
1 small tin chopped tomato
2 desertspoons sunflower oil or similar
A good grind of fresh peppercorns
Heat a Wok or pan with the oil, cook the chopped onion, ginger and chillie till starting to brown.
Add everything else, and a half glass of water, stir and cook for 5 mins, or longer, it's quite casual.
Tip the whole lot into a blender, give it a good blend :-)
Add water if you want it thinner.
You can use this as a dipping sauce as well, better keep it thick for that.
Any sauce left over, spoon it into an ice cube tray and freeze for future use.
