warm button mushroom, spinach & bacon saladrating:
1 Tbs olive oil
250g Countdown White Button Mushrooms
175g streaky bacon, cut in strips
1 avocado – peeled and sliced
Juice of half a lemon
Handful of cherry tomatoes – halved, fresh chives,
Blue Cheese Dressing.
Heat oil in a fry pan and sauté the mushrooms and bacon until golden.
Arrange spinach leaves and avocado in a large salad bowl and drizzle with lemon juice. Top with warm mushrooms, bacon and cherry tomatoes.
Use scissors to snip chives on top, season with pepper and serve with blue cheese dressing.
