black bean sauce

  • 2 cloves garlic, finely chopped
  • 2 tbsp fermented black beans roughly chopped and soaked in hot water for 10 minutes
  • 3 slices fresh giner, finely chopped
  • 1 large spring onion, finely chopped
  • 2 tbsp dark soy
  • 2 tbsp rice wine
  • 2 tsp white sugar
  • 175 ml water

In a wok or a saucepan heat some oil until it starts smoking. Throw in the garlic, black beams, ginger and spring onion to explode the flavours. Stir to prevent burning for 30 seconds then add the rest of the ingredients. Bring to the boil then drop the heat and simmer for 5 minutes.
