warm mackerel salad

Boil new potatoes chopped to bite size pieces.

Whilst they're boiling, roughly chop tomatoes, spring onions, smoked mackerel, add to half a can of black olives and mix with a big spoon of mayo and a small spoon of wholegrain mustard.

Line a sieve with spinach leaves, and slowly drain the potatoes through the spinach to wilt it slightly.  Combine the spinach / potatoes with the fish and vegetables and serve.
