spinach frittata

1 tbsp olive oil
1 red onion, chopped
1 red pepper, chopped
150g spinach leaves
1 clove garlic, crushed
6 spring onions, chopped
500g sliced new cooked potatoes
3 eggs
4 tbsp milk
1 tbsp chopped basil
2 tbsp chopped fresh chives
salt and black pepper
25g grated Parmesan cheese
25g grated Cheddar cheese
Beat the eggs in a large bowl with the milk and herbsm, and season to suit
Heat the oil in a large frying pan and gently fry the onions and pepper until soft. Add the garlic, spinach and spring onions and continue frying until the spinach has wilted. Stir in the potatoes. Pour the mixture over the vegetables and reduce the heat and cook for 10-20 minutes until the eggs begin to set.
Meanwhile, heat the grill to medium, sprinkle the cheeses over the fritatta, then place the pan under the grill for 2 minutes. Cut the fritatta into wedges and serve.
