SWMBO had some of this recently after an Italian meal so I had a go at
juice of about 5 lemons
thinly pared rind off same (unwaxed)
half a dozen tablespoons of caster sugar
split vanilla pod
put in jar and leave for 4-6 weeks, decant, freeze
serve very chilled.
