300ml/10½fl oz milk
30g/1¼oz icing sugar
1 vanilla pod, split
1 orange, zest only
1. Heat the milk in a pan with the icing sugar and vanilla pod.
2. Place the couscous in a large bowl and pour over the hot milk.
3. Cover with clingfilm and leave to steam for 4-5 minutes.
4. Stir in the orange zest and serve in glass dishes.
