simple orange chocolate mousse

  • 8oz decent chocolate broken up into pieces
  • juice and zest of 2 oranges
  • 4 egg whites
  • 4 egg yolks
Melt the chocolate with the orange juice and zest in a bain maire. Alternatively place a bowl over a simmering pan of water and place the chocolate and orange in there- make sure the bottom of the bowl does not touch the water. Stir until melted.

Once melted, take off the heat and beat the egg yolks into the mix.

Whisk up the egg whites until you have a nice fluffy texture. You should be able to make little peaks of froth that don't collapse back into the rest of the mix. Then slowly fold the chocolate mix to this (don't beat or whisk). Then pour the lot into 4 separate ramekins and chill until ready to eat.

Before serving decorate the top with small pieces of fruit or a mint leaf or with some white chocolate powder. As a nice alternative to using ramekins, pour the mix into wine or shot glasses instead.
