This is my own interpretation of Chilaquilas and the tradational recipes may vary widely.

Serves 2+

3 fried Flour tortillas
1 can black beans
1/2 tomato, chopped
1/2 yellow pepper, chopped
4 eggs, over easy
Handful of greens
Bacon, chopped
Cheddar cheese (normally Manchego/Mexican cheese)
salt and pepper to taste
garlic powder
chili powder

Cut up the tortillas into chip like pieces. fry them in olive oil.

Cook everything but the greens - use them for garnish/salad.

Cook the eggs anyway you like, I like them over easy for this dish.

Add cheese to the top of dish, do this quickly so it melts.

Plate, eat and injoy.
