Sliced an aubergine, a courgette, and a red pepper, toss them in h olive oil, and put them in a round, shallow, earthenware baking dish which has also been greased with olive oil.
Added some chopped garlic, and bake in the oven at 180°C (350°F) for half an hour, stirring once or twice.
Mix four eggs, 150ml doublecream, some chopped anchovies, and a small handful of grated cheese of your choice, and pour this over the vegetables.
Put them back in the oven at a slightly lower temperature for 15-20 minutes until the eggs have puffed up, browned slightly, and set but not become rubbery.
