vegan chocolate cakerating:
115g raw cane sugar
4tsp Green & Black's cocoa powder
1/2 tsp sea salt
170g wholewheat flour
3/4tsp bicarb of soda
90ml vegetable oil
1tsp vanilla essence
2tsp cider vinegar
200ml cold water
Mix sugar, flour, salt, bicarb and cocoa together in a bowl.
Add oil, vanilla essence and vinegar, then pour cold warer over the mixture.
Mix well with a fork but don't beat. You'll see little air bubbles starting to rise in the mix.
Throw into 1/2 greased tins [depending on whether you're making a sandwich or not]
Bake for 30 mins at 180c/Gas mark 4.
Top/sandwich with vegan chocolate buttercream. [Just use vegan marg instead of butter]
