vodka and lime sorbet
rating:75g / 6oz caster sugar
450ml / 3/4 pint water
2 limes, zested and squeezed, juice reserved
100ml / 4 floz lime cordial, made up to 450ml / 3/4 pint with water
or tonic
6-8 Tablespoons of vodka
1 *stiffly beaten* egg white
lime and mint to garnish
Dissolve sugar in water over a moderate heat, stirring occasionally.
Add zest & juice of limes.
Boil for 5 mins, or until mixture reaches 110 deg C / 225 deg F.
Let resultant sugar syrup cool.
Add vodka to lime cordial; pour this mixture into cooled sugar syrup.
Fold in egg white.
Pour into shallow container and freeze at lowest setting. When mixture
becomes slushy, remove from freezer, beat, and refreeze. When mixture
again becomes slushy, remove from freezer, beat, and refreeze until set.
Serve in chilled sorbet glasses, and decorate.
Note that it takes a *long* time for this to freeze, so use as shallow a
container as you can.
