You can miss any (but not all) of the ingredients out and you can add others if you feel like it.
I usually use Marigold Swiss Vegetable Bouillon Powder for stock - if it's good enough for Saint Nigel ...
1 large onion
1 clove garlic
several sticks celery
half a swede
a couple of potatoes
1 litre stock
2 bay leaves
Chop onion and sweat gently in the butter.
Chop garlic and add.
Chop everything else and add.
Add stock and bay leaves, plus a couple of grinds of pepper.
Simmer for forty minutes or so. Whizz in the blender. Eat.
