the lazy strawberry shortcake
rating:Another short season is that of British strawberries - by choice, I like to buy mine from fairly local areas; Somerset, for preference. But I picked up some nice Kent ones a few days ago, and foolishly suggested to Pete that I made them into strawberry shortcake.
When the time came to do it, and I looked for a recipe, it all looked so *complicated* - layering things and so forth. So I decided to be idle.
Obviously, I washed and hulled and sliced the berries. I whipped some double cream with some vanilla icing sugar. And I made some shortbread stars to accompany the strawberries and cream.
The only reason I mention it at all is that I made the shortbread with polenta rather than the semolina I usually use, and they were *gorgeous* - had a lovely rough texture to them.
So the next time you're making shortbread, why not try polenta instead of flour? - I'm sure you won't be disappointed.
