The ultimate strawberry ice cream recipe. You can use the crappiest tasting strawberries around and the balsamic vinegar will bring out the flavour.

  • 400g-450g strawberries (a medium sized punnet)
  • 100g caster sugar
  • 5 tbsp balsamic vinegar
  • 150ml double cream (or one pot's worth: 156ml???)
Puree the strawberries with the caster sugar and then add the balsamic vinegar. Put in fridge for 2 to 3 hours to allow the vinegar to infuse. Pour into ice cream maker with the double cream. Switch on.
