potatoes in chicken stockrating:
if you roast a chicken, then for heavens sake, boil up the carcass for stock. It's wonderful for soup, or for cooking vegetables in, or for making this potato dish.
thinly slice rather more potatoes that you think you can possibly eat
(because you /will/ eat more than that), and layer them in a well buttered
sprinkle with coarse ground good quality black pepper, and douse in
said chicken stock.
I can't remember how long it takes to cook - longer than you'd expect. Start it off in the microwave for 3 minutes to kick start it.
I sometimes bung some grated parmesan on towards the
end. Just scoff the potaties with a simple green salad - delicious
(recipe one of Nigel Slater's - wonderful idea).
