massaman chicken curry
rating:1 lb chicken
1 can coconut milk
3 tbsp fish sauce
3 tbsp sugar
1 can bamboo drained
3 to 4 tbsp massaman curry
1/2 tsp kosher salt
3 carrots sliced
4 cups steamed rice
Steam carrots until still crisp. Slice chicken into strips and saute in olive oil until juices run clear. Remove from pan and add coconut milk, curry paste, fish sauce, sugar, and salt. Simmer until bubbly and add carrots, chicken, and bamboo. Heat through and serve over rice.
Ok, I know that most people serve their Massaman curry with potatoes but they are a little to starchy for me especially when you add rice. I like this with bamboo. The more curry you add the stronger the flavor and the more spicy it will be. Also the longer you let this simmer the sweeter it will become. I like to do this in an electric skillet because I can control the heat better.
My only request is that you all take it easy on me. This is my first posting. Please dont rip me to shreads yet!!!!
