tuna with soy and lime broth

1 tbsp coriander seeds
½ tsp chilli flakes
½ tsp cumin seeds
½ tsp dried turmeric
100g/3½oz fresh tuna
2 tbsp runny honey
broth
1 tsp vegetable oil
2 x spring onions, finely chopped
½ red pepper, thinly sliced
2 tbsp soy sauce
3 tbsp sesame oil
pinch of chilli powder
150ml/5fl oz/¾ pint of hot water
15g/½ oz ginger, thinly sliced
Juice of 1 lime
serve with rice
tuna
gently heat the spices in a small frying pan and cook for one minute.
add the tuna and cook for two minutes on each side.
de-glaze the pan with honey and serve (the tuna should be served pink).
broth
heat the oil in a medium saucepan. Cook the spring onions with the red pepper in soy sauce and sesame oil for 1 minute.
add the rest of the ingredients and simmer for four minutes. Add the lime juice.
serve the tuna with the broth and the white rice.
