penne with lettuce

25g butter, plus extra for greasing
800g lettuce, shredded
3 tablespoons olive oil
350g penne
100g Gruyere cheese, freshly grated
salt and pepper

Preheat the oven to 180degC/gas mark 6

Grease an ovenproof dish with butter

Place the lettuce in a bowl, add the oil, and season with salt and

Cook the penne in a large pan of salted, boiling water until
al dente, then drain and tip into the prepared dish

Cover with the lettuce, sprinkle with the Gruyere and dot with
the butter

Bake for about 20 minutes

This is a direct lift of (or rather happens to be identical to) a recipe in The Silver Spoon. It's absolutely delicious.
