This is my version of what my mother called winter salad, although it is suitable for any time of year.
2 Large, crisp, red apples
1 Head of celery
250 gm cooked beetroot in vinegar
350 gm mayonnaise
2 cloves of garlic
1/2 teaspoon ground nutmeg
Cut the celery, beetroot and apples into pieces of a size to suit you, I like roughly 1 cm. Stir together in a bowl with the mayonnaise. Chop the garlic very small and add together with the nutmeg and mix together again.
You can make your own mayonnaise if your arteries can stand it, but I usually use one of the better quality commercial 'light' varieties. With this, the salad has so much vegetable content that it is quite healthy.
