smoked cod lasagnerating:
500g smoked fish (cod, haddock, whatever)
600ml semi-skimmed milk
40g plain flour
some fresh parsley
400g leeks, trimmed and sliced
6 sheets of dried lasagne
25g grated mature cheddar cheese
Preheat oven to 200C, gas 6
Place fish in a large deep-sided frying pan with the milk, and poach gently for 5 minutes. Remove the fish, flake and set aside, reserving the milk.
Melt 40g of the butter in a pan, stir in flour,a nd cook for one minute, then whisk in reserved milk, and simmer for 2 minutes, stirring until thickened. Add fish and chopped parsley.
Melt remaining butter in a pan, add leeks, and cook for 5 mins over moderate heat, stirring occasionally, until they are softened.
Place half the fish mixture in the base of a buttered ovenproof dish, top with half the lasagne, then the remaining fish mixture, half the leeks and the remaining lasagne. Spoon over the remaining leeks and fish, sprinkle with the cheese, and bake int he preheated oven for 20 minutes.
