Cook enough potatoes for everyone¹ and mash with a knob of butter, a drop of milk and salt and pepper to taste. Leave to one side for a couple of hours to cool and then grate in cheese, type and amount completely up to you. Throw in some chopped chives and mix using your hands. Lightly dust work surface with flour. Then take a handful of the mash and roll it into a ball, then pat down making a patty about 1.5 to 2 cm thick. In the meantime, throw an obscene amount of butter into a skillet and melt over a medium heat. When melted place the cakes onto the pan and then turn them over to make sure both sides get buttered. Then cook each side until well browned.
The advantage of these barbecue wise is that you can cook them well in advance and then just throw onto the grill a couple of minutes before delivery.
