Inspired by the Kinsey Millhone novel L is for Lawless


per person

1 slice bread
1 egg
butter, olive oil
Seasoning to taste


Take slice of bread and butter fatly on one side.

Use a small glass to chop a hole in the middle of it

Fry the bread in the oil on the non-buttered side until the butter on top just starts to melt

Flip the slice onto the buttered side, break an egg into another bowl, check it's not bad, then pour into the hole in the bread.

If you don't like your egg runny, flip the slice again near the end of cooking to firm up the egg.

Serve with coffee and orange juice.
