sri wasano's infamous indonesian rice salad
rating:place rice and water in a saucepan, bring to boil, cover and simmer for about 45 minutes.
while the rice is cooking, combine the following in a large bowl:
1/3 cup peanut oil
3 tbsps sesame oil
1/2 cup orange juice
2 medium cloves garlic, minced
1 tsp salt
2 tbsps soy sauce
1/2 tsp crushed chilli (to taste)
2 tbsps wine vinegar
1 cup chopped fresh pineapple (or canned, but not the sweetened stuff)
add the hot rice directly to this dressing, and mix well. When it's cooled to room temperature, cover tightly and refridgerate till cold. Shortly before serving, stir in:
3 spring onions, finely chopped
1 stalk celery, finely chopped
1 medium pepper, thinly sliced
1 x 8oz tin of chestnuts, drained and sliced
8 oz bean sprouts
1/2 cup raising or currents
1 cup coarsely shopped peanuts and/or cashews, lightly toasted
2 tbsps sesame seeds
