just white beans

1 1/2 cup dry white pea beans (I guess these are canneloni or similar)
3 tbsps olive oil
2 tbsps red wine vinegar
1 tsps salt
2 medium cloves garlic, chopped
black pepper
1/2 tsp basil
1/4 cup finely chopped parsley
2 tbsps fresh dill (or 2 tsps dried dill)
pickled red onions

place beans in medium sized pan, cover with water. Simmer, partially covered, till tender but not mushy (1 - 1 1/4 hours). Drain well, transfer to a medium sized bowl. Or you could just open a can or two! (but I prefer to use dried beans if I can - much cheaper).

drain well, and transfer to a medium sized bowl. Add remaining ingredients, mix gently and season. Cover tightly and chill till cold. Serve topped with pickled red onions.
