wensleydale cheese soup

25g butter
110g smoked bacon, chopped finely
2 medium onions, finely chopped
1 clove garlic, finely chopped
1.5l chicken stock
1 teaspoon paprika
250g wensleydale cheese, grated
black pepper
sauté bacon, onion and carrot in butter over medium heat for 3-5 mins. Add garlic, cook for further 2-3 mins. Add chicken stock and paprika, cover and simmer for 20 mins.
cool before processing in a liquidiser till smooth, transfer back to pan and heat slowly, adding grated cheese and stirring well. Season with black pepper to taste; it will probably not need salt. Serve.s
