mojo sauce (picon version)
rating:
- 6 fl oz olive oil
- .5 whole garlic
- 2 red chillies
- 2 tbsp fresh coriander
- 1 tsp ground chilli
- salt
- pepper
- lemon juice
- vinegar
- water (if needed)
Put oil, garlic, chillies, chilli powder, coriander, salt, pepper, vinegar and lemon juice in a bowl. Liquidise - taste. Add more garlic and chilli to suit taste. Add water if the mix gets too thick. (more chilli =
Mojo Picante). There is a
Sauve version of this which uses cream instead of olive oil and
Verde which uses green chillies instead of red. Pour on anything (espescially
Papas Arrugadas).
