A classic potato dish from the Canaries.
- 4.5lbs small unpeeled potatoes (bite or 2 bite sized), washed
- 4 tbsp rock salt (NOT table salt)
Add potatoes to saucepan of fresh water with the rock salt. Bring to the boil and simmer fast for 20 minutes. Drain off excess water and leave a small amount at the bottom of the pan. Return to heat and boil of remaining water, keeping the potatoes moving until skin is dry. Serve with Mojo sauce
