redcurrant muffins

This recipe came in the leaflet with our veg box this week - looks lovely. I'm sure you could substitute dried fruit, e.g. cranberries.

60g unsalted butter/marg, melted
175g plain white flour
2 tsp baking powder
1/2 tsp salt
100g caster sugar plus some for sprinkling
1 large egg
120ml milk 
125g fresh redcurrants

Preheat oven to 180˚.

Sift flour, baking powder together into a bowl, add sugar.

Beat egg with milk and melted butter. Add to flour, and fold in quickly.  Add redcurrants, and try not to burst them!

Spoon into a 12 cup muffin pan, and sprinkle some caster sugar over the top.

Bake for 20-25 minutes until golden brown.
