butter 150 gm
apples 4 (just use whatever you have to use up)
brown sugar 150 gm
baking soda 2 tsp
mixed spice 1 tsp
cinnamon 1 tsp
salt 1/2 tsp
sultanas 200 gm
Melt the butter and allow to cool
Place the grated apple into a stainless steel bowl, sprinkle with the brown sugar and pour the butter over the top and mix well. Add the egg and mix well.
Sift all dry ingredients together and then mix in the wet, finally fold in the fruits
Pour into a prepared cake tin, and bake at 180°C for 45 - 60 minutes. Remove from the oven, allow to cool in the cake tin for 5 minutes, remove and place on a cooling rack.
