gujerati green beans

450g fresh green beans
2 tbsp vegetable oil
1 tbsp black mustard seeds
4 cloves garlic, peeled and finely chopped
1 dried red chilli, coarsely crushed (in a mortar is best)
1 teaspoon salt
1/2 teaspoon sugar
black pepper

Trim the beans and slice them in to 2.5cm chunks, then blanch them for 3-4 minutes.  Drain under cold running water and set aside.

Heat the oil in a large shallow pan, and add the mustard seeds.  When the start to pop, add the garlic and stir it around until it's browning.  Add the chili, and stir for a few seconds.

Add the beans, salt and sugar, stir, then turn the heat down and cook for 7-8 minutes.  Add black pepper to season, and serve,

This is a lovely dish - we eat it as a main course with basmati, but it's lovely as a side dish too.
