quick satay sauce
rating:1 can coconut milk
3-4 large shallots
tsp Thai red curry paste
2 tsp tamarind paste
3-4 tbsp peanut butter
dollop of yellow bean sauce
good sloosh of Thai fish sauce.
Finely chop shallots, amd add to coconut milk. Bring coconut milk to simmer, and allow shallots to soften. Stir in all other ingredients, adding peanut butter last. Allow to mix and then reduce to consistency required.
