chicken with st augur sauce

4 skinless chicken breasts
knob of butter
1 tsp cornflour
6 tsp cream (double or single, doesn't matter)
4oz Saint Agur cheese
Fry chicken with butter in a frying pan until nicely golden and cooked through. Remove from pan and keep warm while you make the sauce. Add the cornflour to the butter juices in the pan, then blend in the cream. Add the Saint Agur,
finely sliced, and a good sprinling of freshly ground pepper. Bring to the boil, stirring all the time and continue to cook for a minute or so until the sauce is
nicely thickened. Pour over the chicken, serve and enjoy.
