lamb & feta burgersrating:
450 g lamb mince
225 g feta cheese, crumbled
2 garlic cloves, crushed
6 spring onions, finely chopped
85 g ready to eat prunes, chopped
25 g pine kernels, toasted
55 g fresh wholemeal breadcrumbs
1 tbsp chopped fresh rosemary
1 tbsp sunflower oil
Place the lamb mince in a large bowl with the feta, garlic,spring onions, prunes, pine kernels and breadcrumbs. Mix well,breaking up any lumps of mince.
Add the rosemary to the lamb mixture with salt and pepper to taste. Mix together, then shape into 4-6 equal sized burgers. Cover and leave to chill for 30 minutes.
Preheat the barbecue. Brush the burgers lightly with half the oil and cook over hot coals for 4 minutes, then brush with the remaning oil and turn over. Continue to cook for 4 minutes or until cooked through. Serve immediately.
