nicole’s cheese cake
rating:1lb curd cheese
½ large cup caster sugar
3 eggs
5oz double cream
½ pack of digestive biscuits
2oz butter
5oz sour cream
2 to 3 drops vanilla essence
Loose bottom cake tin
Melt butter
Put biscuits in bag and roll until crushed
Mix with butter and spread thinly over cake base
Separate eggs and beat whites till stiff
Mix yolks, sugar, cheese and cream with fork until smooth
Fold in egg whites with metal spoon
Spread on top of base
Place tin in middle oven no4 for 25 mins
Remove
Immediately mix sour cream and vanilla essence
Pour over thinly and smooth out
Bake for further 5 mins
Leave to cool and keep in fridge
