asparagus with lemon and parmesan cheeserating:
I'd serve this with pasta, myself.
3 tbsp olive oil
450 fresh asparagus, peeled and left whole
1/4 tsp salt
1 tbsp lemon juice
3 tbsp freshly grated parmesan
heat the oil in a large frying pan, and add asparagus. Coat with oil, then add 3 tbsp water and the salt. Cover, turn the heat low, and cook till the asparagus is just tender (3-4 minutes).
remove the cover and turn up the heat to boil away all of the liquid - only the oil should be left.
put the asparagus onto the plate and pour the pan juices over. Dredge with lots of parmesan.
