roast shallots, leeks and garlicrating:
eat as a side dish with roast, or sasuages. Or up the quantities for a veggie supper - melt your favourite cheese over the top.
this recipe came out of our Riverford box yesterday.
4 cloves of garlic, peeled
salt and pepper
cut the leeks lengthways to the core, and rinse under running water while fanning them. Top and tail the leeks, keeping the white part whole.
take the outer leaves off the shallots and place them in a roasting tin with the leeks and garlic.
drizzle some olive oil, add a little salt and pepper, and cook for 25 mins at gas 6/200C for 25 minutes, stirring them half way through.
