lamb tagine

300g diced lamb
1 squeezed orange and zest
20g apricots/prunes/dates
20g sultanas
300ml chicken stock
10g flaked almonds
1 tbsp honey
1 tin chopped toms
1 large onion sliced
pinch saffron
2 tbsp ras al hanout
Toss lamb in 2tbsps ras al hanout and ideally leave overnight.
Heat oil in frying pan and gently fry the onion with a further tbsp of ras al hanout. After 10mins add minced garlic.
Transfer onions to tagine dish, add more oil to frying pan, brown the lamb, then transfer to tagine dish.
Bring tomatoes, fruit, nuts, saffron, stock, honey, orange zest to the boil in a saucepan, and simmer for 10mins. Add to tagine.
Cook in oven for 2.5-3 hours in oven at 150 deg C.
Sprinkle with fresh coriander and serve with couscous.
