stuffed peppers
rating:mix together:
500g peeled, deveined, finelly chopped raw prawns
300g lean pork mince
1 tsp salt
3 finely chopped spring onions
3 tbsp chopped water chestnuts
3 tsps soy sauce
2 tsps dry sherry or rice wine
cut 3 peppers lengthways into 3-4 segments and remove seeds and membrane. Fill the pepper wedges with filling and cut in half.
heat 1 tbsp oil in a wok, and cook the pepper pieces in 2 batches over medium high heat for 3-4 minutes or until well browned. Turn over and cook for a furhter 3 minutes. Serve immediately
