sweet couscous with blackcurrants and yoghurt…

Sounds interesting.  I will report back when I have tried it. Might be nice with blueberries.

For the sweet couscous
100g/3½ oz couscous, cooked (follow packet instructions)
2 tbsp self-raising flour
1 tbsp brown sugar
1 free-range egg
50g/1¾oz blackcurrants
1 tbsp vegetable oil
To serve
25g/1 oz Greek-style yoghurt

1. For the sweet couscous, mix all the couscous ingredients together in a bowl to form a thick paste.
2. In a blini pan heat the oil. Drop dollops of couscous batter in the frying pan to form small pancakes and turn over after a minute and cook for a further two more minutes.
3. Serve with Greek-style yoghurt.
